Banana [Mixed Nut] Bread

This Banana Bread is one inspired by the OG Mums.  She eats a piece, not the whole one, a piece of Banana in the morning and then again in the evening. This is a great recipe for everyday — it’s decadent, and still healthy, and it will bring your whole family to the table.

Ingredients

  • 2 cups flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1½ teaspoons baking powder
  • ¼ teaspoons ground cinnamon
  • 1/8 teaspoon of nutmeg
  • 2 beaten eggs
  • 1½  cups of mashed bananas [5/6 medium]
  • 1 cup of sugar
  • ½ cup cooking oil
  • 1 teaspoon finely shredded lemon peel [optional]

Optional - 1 cup chopped pecans/walnuts/almond chopped together or use one of these nuts

Directions

  • Grease the Bottom - and ½ inch up the sides of a baking loaf pan; and set aside
  • In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in the middle and set the bowl aside
  • In another bowl place chopped bananas [not to fine] add in beaten eggs, sugar, cooking oil and if desired lemon peel - combine them all together
  • Add this liquid mixture all at once to the dry mixture. Stir in gently until moistened [batter should be a bit lumpy] Fold in nuts if desired
  • Spoon batter into the prepared pans
  • If you love nuts, sprinkle a few of the crushed nuts to the top of the loaves before inserted into the oven
  • Pre-heat oven to 350 degrees. Bake for 55 to 60 minutes or until the top is a beautiful golden brown and the wooden toothpick inserted directly into the middle of the bread comes out clean. [if needed cover the top for the last 15 minutes to prevent over browning]
  • Cool in the pan on a wire rack for about 10 minutes
  • Remove from pan and cool on the wire rack completely
  • Nothing beats hot Banana Bread fresh from the oven with a tall glass of your favorite beverage
  • OR wrap and store overnight before slicing. [if you can wait that long]
  • Be Creative!
  • Add in Your choice of Chocolate Chips - Apricots, Dried Plums/Prunes - Cherries - Pears - Papaya, Pineapple  - the list is as long as your imagination
