MuMs Date Nut Bread

Date Nut Bread is a delicious and nutritious option for those looking to improve their diet. Ingredients

  • 1½ cups of coarsely chopped dates
  • 2 tsp baking soda
  • 2 cups boiling water
  • 1 stick of butter [softened]
  • 2 tsp vanilla essence
  • 2 lrg egg [room temperature]
  • 2 tsp of baking powder
  • 1 tsp of Cinnamon
  • 1 tsp of salt
  • 3 cups of flour
  • 1 cup of brown sugar
  • ½ cup of granulated sugar
  • 1 cup of nuts [choose either walnuts|pecans]
Cream cheese Nut Spread SPREAD ===
This is mixed with finely chopped nuts and spread on slices of
[warmed] date-nut bread
 
½ cup of dates pitted & finely chopped         1 pack of Cream Cheese [softened]
½ tsp spoon of pineapple juice                      ½ tsp of heavy cream
½ tsp of vanilla essence                               
½ cup of finely chopped Walnut or Pecans or Both

 

Instructions

Preheat oven to 325 degrees.  Grease one loaf pan generously with butter|flour or spray with cooking spray

Prepping dates: Add the dates to a bowl 
Sprinkle the baking soda over the dates
Pour the boiling water over the dates and allow them to cool 
KEEP THE DATE WATER.

Mixing:

With a mixer, cream the butter and sugar together on medium-high speed 
Add the egg and mix on medium speed until all ingredients are thoroughly combined. 
Add vanilla essence
Using a strainer, strain the water from the dates into the mixing bowl and mix it in thoroughly

Add the flour and mix just long enough to almost incorporate all the flour
then add the dates and nuts and mix on low speed just to incorporate  Do not over mix

Baking:

Transfer batter to the greased loaf pan and bake for 55 to 60 minutes or until a toothpick test comes out clean 

Run the back of a sharp knife around the edges of the pan, and allow the bread to cool in the pan for 10 minutes. Gently shake the pan up and down to loosen the bread from the bottom of the pan.  Invert the bread onto a wire rack to finish cooling

Store bread in an airtight container for up to 3 days on counter or refrigerate for up to 5 days

Bread can be wrapped and frozen for up to 3 months
